Key duties include managing staff, ensuring quality and sanitation standards, monitoring food costs, and collaborating with the chef on menu planning, purchasing, and training. This position requires a strong background in cold food preparation and supervisory skills, and it is crucial for a guest's final culinary impression.Core responsibilities* Manage cold food production: Oversee the preparation of all cold items, such as salads, sandwiches, canapés, hors d'oeuvres, platters, and artistic displays.* Staff management: Supervise and train pantry staff, including assigning duties, monitoring performance, and recruiting new hires.* Quality and safety: Ensure all dishes meet quality standards and that all sanitation and safety procedures, including USPH standards on cruise ships, are followed.* Inventory and cost control: Monitor food usage, control wastage, and manage inventory to keep food costs within budget.* Menu and purchasing: Collaborate with the head chef to plan menus, order supplies, and negotiate prices.QualificationsEssential skills and qualifications* Experience: Several years of experience in cold food preparation, including fancy foods, buffet layout, and displays. Previous fine dining or line experience is often preferred.* Culinary skills: Proficiency in various techniques like slicing, carving, piping, and forming, as well as specific knowledge of cold dishes like pâtés, terrines, and salads.* Management skills: Experience in planning, organizing, and prioritizing work, and developing and coaching team members.* Communication: Good communication skills are necessary for managing staff and interacting with other departments or clients.* Education: A high school diploma or equivalent is typically required. A degree in culinary arts can be beneficial.* Licenses: A food handler's license may be necessary depending on the location.
